Green Goddess Granola
The basic recipe contains coconut and egg whites that provide a good bind without adding sugar and calories to the mix. Simply combine the dry ingredients with the coconut oil, syrup and finally frothy, whisked egg white until well mixed.
250g of Jumbo Oats
50g of desiccated Coconut
3 Tbsp. of Honey or Maple Syrup
3 Tbsp. of Coconut Oil
1 egg white
In addition to the base ingredients you add the tasty bits of preference. It may be just nuts or both nuts and seeds. You can add fruit, superfood or big flakes of coconut. The choice is yours …..
250g of mixed nuts. We like them roughly crushed for a good nutty bite.
150g mixed nuts & 100g of mixed seeds
50g of sunflower seeds, 50g of pumpkin seeds, 100g flaked almonds & 100g of dried berries
200g of pistachios, pecans and macadamias with shavings of dark chocolate added once the granola has cooled after baking
100g mixed chopped dried apricots, dates and sour cherries, 150g of walnuts, 100g of Brazils
120g of chia seeds, 100g of almonds, 75g of pumpkin seeds
200g of mixed nuts plus cinnamon mixed into the cooled baked granola (lovely with cold milk)
Once you have combined your dried ingredients including the delicious additions spread the granola onto a lined baking sheet as evenly as possible. Heat the oven to 140 degrees and cook for 40 minutes in total. After 20 minutes give the granola a little stir around to make sure it gets an even bake.
Once cooled store in an airtight container.
