Mango Salsa Salad

I made this mango salsa salad seeking variety during the heat wave. I had been serving up lettuce leaves, tomatoes and cucumber slices as a matter of convenience but this salsa style salad was quick and easy and only took a few mango's added to the shopping list (which by luck were half price). Its a salsa style salad with copious amounts of coriander which I love.

The sweet mango, crispy pepper and onion go so well with the tart lime and the kids loved it. Serve with BBQ, tacos or rice. Actually you could serve this dish with endless accompaniments. 

Ingredients:

3 ripe mango's diced

1 red pepper diced

1 red onion diced

1 thinly sliced red chilli (optional)

1 large bunch of coriander

juice of a lime

Salt to taste

My mouth is already watering:

  1. Place the diced mango, pepper and onion in a bowl.
  2. Add the sliced chilli and chopped or torn coriander.
  3. Squeeze the lime juice over the top and season.
  4. Toss in the bowl to serve.

Leave covered in the fridge for about 20 mins before serving.
