Lentil, Coconut & Chilli Soup
Lentils, coconut oil, fresh chilli, onion and organic vegetable stock cube. Just 5 ingredients and 20 minutes makes tasty comfort food in a bowl. The coconut oil gives the soup enough subtle flavour but you could add garlic when you fry the onions if you wanted. Lentils are the original superfood. Cheap and highly nutritious they are definitely one for the shopping list. They do not need soaking in advance and cook really quickly.
Lentils are an amazing source of vitamin B, folic acid, calcium, iron, potassium and protein. They keep you feeling full, are good for the digestive system, blood and circulation and lowering cholesterol.
Ingredients:
250g red lentils
2 tbsp. coconut oil
1 small onion
1 vegetable stock cube
1 red fresh chilli
Make me that creamy soup:
- Chop the onion and chilli and fry in a little oil until soft.
- Add the lentils and 500ml of water to the pan.
- Crumble in the stock cube and boil for 15 minutes until the lentils are soft.
- Blend into a creamy soup adding more water as necessary.
