Chilli Cheese Lentil Wedge
Warm chilli, creamy cheese and comforting lentil baked into a handy wedge that can be eaten hot or cold. Nourishing and simple to make. Pack in foil for lunch on the go or enjoy with steamed vegetables for a hearty mid week meal.
Ingredients:
250g red lentils
1 red chilli
I red pepper
1 small onion
1 egg (beaten)
25g wholemeal bread crumbs
25g cheddar cheese
Boil your lentils until the water has evaporated and the lentils are soft.
Chop your onion, peppers and chilli into small pieces and fry in a little oil until soft.
Combine the lentils, breadcrumbs, cheese, onion mixture and beaten egg until well mixed.
Press your mixture into a baking/sandwich tin and bake for 30 minutes at 180c.
Eat straight away or refrigerate as a quick and easy cold snack.
