Creamy butter bean dip
When is a dip not a dip? Or more to the point, when does a dip not taste like real and flavoursome food? When you purchase the sloppy, anaemic, pre packaged variety from the supermarket.
If there was ever a reason to give your own a go its this. My Auntie Anna's creamy butter bean dip. Its ridiculously quick, easy and incredibly delicious. If you don't fancy soaking butter beans overnight you can make this even more convenient by buying the organic cartons from the supermarket.
An olive and watercress topping compliments the deliciously creamy bean with the slight spice of paprika to top off the mouth watering combination.
Ingredients:
380g carton of organic butter beans or dried (remember to soak in cold water overnight)
1 garlic clove crushed
1 tbsp. olive oil
Sea salt and black pepper to taste
We love a bean dip:
- Rinse the carton broad beans ready for blending. Soak dried beans overnight and boil until tender ready for blending.
- Blend you beans or mash if you prefer a chunkier consistency.
- Transfer to a bowl and beat in your crushed garlic, olive oil, salt and pepper.
- Top with halved olives, watercress or rocket and a sprinkling of paprika.
- Chill to serve.
